Tracking Who Opens Emails

Multiple users check emails but on occasion users are opening the email and not responding or addressing the customers concerns. I would like to the user who opens the email first tracked with in the DealerMine Email tab.

Change Profile Email when Changing Upon Send Email

I am looking for an option so that when I go to send an email to a customer but then change the 'To' email to something different that it automatically saves it to the customer profile. Maybe a box pop up asking me to switch it.
